Dinner and a concert

Taking some of my greatest passions: TV, music and food, chef Sam Mason has conjured up a dish called Dinner With The Band. The TV show is a great concept, a clash between the worlds of music and food. A couple of weeks back saw brilliant group Theophilus London visit the studio, with some flavourful end results.

For the cooking session, Sam was inspired by Theophilus' Caribbean childhood (he is Trini). And Sam didn't stop at curry chicken. Try this:

- Calypso Porterhouse (a yummy styled porterhouse steak).

- Charming Callaloo (obviously a Callaloo salad, but looked great).

- Burning Cornbread (Cornbread, jerk seasoning and honey. Oh lord).

But get this: there was a ginger beer and rum cocktail to top things off! I tried versioning it like this:

2 parts Malibu Rum
3 parts Ginger Beer

Pour into a highball glass. Add fresh ice. Garnish with a wedge of lime. Enjoy while listening to Theophilus London, live from Sam's show.
